Whether your wedding cake
comes from a commercial bakery or a home-based cake designer,
it should be produced according to the same health and safety standards, enforced by
state regulators.
The N.C. Department of Agriculture oversees all facilities
preparing packaged foods for sale, including bakeries. It allows such “low-risk”
baked goods as cakes and cookies to be prepared in home kitchens, if they meet all
the state rules.
A home baker’s kitchen must be inspected and the water supply
tested. Foods for sale must be prepared at different times from when family meals are
cooked.
One of the strictest rules is a total ban on any pets in the
home at any time. That applies not only to dogs and cats, but to birds, fish and any
other animals.
